This is another quick and delicious way to cook fillet of sole or most any flat white fish. Vary the cooking times with the thickness of the fish. Sole takes the minimum time; tilapia takes about 15 to 30 seconds longer per side. Brussels Sprouts with Pistachios and Bacon, Oven-Roasted Asparagus with Macadamia Nuts, or sautéed green beans, along with cooked rice or couscous, are all fine side dishes to serve with the fish
