Paella is Spain’s most famous dish. Although said to have originated in Valencia, there are numerous versions of this dish. Most often they are made with seafood, chicken, and rice. During the years I lived in Paris, and before I had been to Spain, some very close friends had a Portuguese cook named Maria. The wonderful aroma that wafted through the house when she was cooking this fragrant stew never failed to draw me to the kitchen. While my version has changed over the years, memories of
