Clafoutis is a classic French dessert—a puffy, custardy, fruit-filled pancake. Most often they are made with cherries, but my favorite fruit for this dish is plums. Serve it warm, straight from the pan either for brunch or dessert. Pfannkuchen is another puffy pancake made with apples.

Ingredients

  • ½ cup unbleached all-purpose flour
  • ½ cup + 3 tablespoons sugar

Method

Preheat your oven to 425°F.

In a large bowl, sift the flour, the ½ cup of sugar, and salt. In a small bowl, blend the milk, eggs, and almond extract together, and then whisk them into the dry ingredients until smooth.
