Apple Toffee Muffins

From the time I was a child, fall meant a trip to the North Carolina mountains. Blowing Rock, Boone, Asheville, Hendersonville, and Flat Rock were family favorites. As an adult, I also came to love Highlands and Cashiers. My mother’s family were from the foothills of South Carolina, and as much as she came to love the Lowcountry, she couldn’t wait to get a first glimpse of the mountains whenever we headed that way. A stop for apples was always on the agenda for the trip—we loved the ones fr
