Savory Blue Cheese Cheesecake

When my two eldest godchildren, Windy and Sally, were young we used to make these cheesecakes in 4-inch individual springform pans as Christmas gifts for the girls’ teachers. My mother and grandmother had been teachers, and I lobbied for the teachers’ association in South Carolina for many years.
