The “Momma” Cake or Easter Lemon Coconut Cake

This cake is a tribute to three very important women. While we’d made pieces and parts of this cake for years, my mother and I put them all together for an Easter brunch in Columbia many years ago. The divinity icing recipe is hers, and I wish that I’d paid more attention back then so I’d know exactly how she made it. I’ve had to go back and experiment on my own to figure it out.

The layers are Mrs. Kitty Windham’s lemon pound cake, and the lemon filling is the reci
