  • 800 g (1 lb 12 oz) pork belly, sliced 1 cm (½ in) thick

Method

  1. For the soy caramel, combine the sugar and 60 ml (2 fl oz/¼ cup) water in a small saucepan over medium heat. Bring to the boil and cook the syrup until it is a deep golden-amber colour.
