Some things just work so well together, and eggs and anchovies are in that category. They are especially good in this posh egg on toast. The anchovy butter is delicious by itself on toast, as well as for many other dishes – try rubbing a chicken with it before roasting!

  • four 10 cm (4 in) pieces Turkish bread, cut lengthways

Method

  1. Preheat a grill (broiler) to hot and toast both sides of the eight pieces of Turkish bread. Chop four of the anchovy fillets finely. Combine these with the butter, pepper, lemon zest, chives, cayenne pepper, nutmeg and worcestershire sauce.
  2. Spread the anchovy butter on four slices of bread and top each one with a fried egg and two anchovy fillets. Arrange some
