A huge thanks to talented pastry chef Nicole Liao – or Gin, as we call her – for showing me this neat cheese-wrapped-in-omelette technique, and for convincing me to try the surprising but delicious combo of peanut butter and a BLT. Who would have thought!

Bread

  • 4 bagels

Method

  1. Preheat a grill (broiler) to hot. Cut the bagels in half and toast them under the grill.
  2. Butter the bagels and thinly spread the peanut butter evenly on the bottom halves. Place the lettuce leaves on the peanut butter, then the bacon, followed by the tomato slices. Season the slices with salt and pepper and add the cheesy omelette square on top. Close the bagel
