The cherry blossom season in Japan is extremely important and significant. Cherry blossom has a unique flavour that resembles almonds, and it goes well with desserts as well as savoury dishes.

Ingredients

Bread

  • four 5 cm (2 in) thick slices brioche loaf, crusts removed and trimmed to 5 cm (2 in) cubes

Method

  1. Put the brioche cubes in a sealed container and place them in the refrigerator for a few hours to dry out and harden up (this will help with soaking).
  2. Combine the milk, cherry blossom paste, eggs and 40 g (1½ oz/ cup) of the icing sugar. Mix well together, then strain
