I have yet to meet anyone who doesn’t love a simply cooked, comforting roast chicken. Although many people are giving the traditional Sunday roast a miss, good old roast chicken seems to be undergoing a revival in many up-and-coming restaurants. I simply love the wonderful aromas given off as a roast chicken cooks, not to mention loving the look of anticipation on the faces around the table when it is about to be served. Everyone knows they are in for something special.
