Many home cooks regard fresh truffles as one of the ultimate luxury ingredients, far beyond their pockets. But you can find less expensive, good canned or bottled truffles in delis, and over the last two years, we have seen the emergence of the British truffle. These are excellent and well worth sourcing and, dare I say it, less costly than their French or Italian cousins.
