Traditionally prepared Peking duck is made by air-drying the duck, then cooking it whole, and finally glazing it in the oven in an aromatic, sweet, sticky glaze. This is a long process. My recipe uses duck breasts and involves a lot less fuss. I serve mine with a sweet onion jam and I often also accompany it with some chilli-roasted king oyster mushrooms and sweet potatoes.
