Sofritos form the basis of many Spanish Caribbean dishes. They are simply a combination of sautéed onion, garlic, red peppers (bell peppers) and garlic. There are many variations - for instance you could add some tomatoes and coriander (cilantro). When making this dish, it is important that, once you’ve added the stock, you do not disturb the paella by stirring it.
