I love the simplicity of this dish of great-tasting chicken marinated in a flavoursome mixture of olive oil, lemon and oregano. I like to serve the thighs on a bed of chargrilled young leeks, beetroot and courgettes (zucchini), then I drizzle the whole dish with a little sweet lemon dressing, which brings all the flavours beautifully together.
