Orange blossom honey is a revelation. It gives a subtle hint of orange to this simple, hearty casserole - as well as being amazing when spread lavishly on toast or spooned over hot rice pudding. If you can’t find it, use regular honey and add 100ml (3½fl oz/scant ½ cup) concentrated orange juice at the same time as you add the stock.
Season the chicken breasts with salt and pepper and rub with the saffron.
Place the oil in a shallow, lidded frying pan (skillet) over a medium heat. When the oil is hot, add the chicken breasts and fry for 2-3 minutes until gold
