Coq au vin is perhaps the most famous classic French dish. It’s been travelling around the world for years. Although a classic, it consists of nothing more than chicken braised in red wine. Traditionally, it was made using a cock bird and the sauce was thickened with the bird’s own blood. Some people, including myself, think it’s a pity that this practice has all but died out.
