Pomegranate and Orange Mustard Baste

• 100 ml (3½ fl oz/scant ½ cup) concentrated orange juice

Place the orange juice in small pan over a medium heat. Bring to the boil and boil until it has reduced by half. Add the remaining ingredients and cook for 1 minute more. Use to baste the poultry as it cooks.
