  • 25 g (scant 1 oz/ tbsp) unsalted butter

Method

Melt the butter in a frying pan (skillet) over a medium heat. Add the onion, sage and chestnuts. Cook for 10 minutes, or until the onions are soft. Transfer to a bowl and leave to cool. Add the sausage meat, eggs and breadcrumbs and mix well. Season with salt, pepper and allspice.
