Ingredients: 2 garlic cloves, unpeeled; 2 onions, chopped; 2 carrots, chopped; 2 celery sticks, chopped; 2 sprigs of thyme; 10 black peppercorns; 2 tbsp tomato purée (paste); 2 tbsp tomato purée (paste); 2 kg (4½ lb) chicken carcasses or wings, chopped; 3 tbsp sunflower oil; 2 kg (4½ lb) chicken carcasses or wings, chopped; 4 litres (7 pints/3.4 quarts) water
