Chile and citrus combinations from around the world often inspire my barbecue. Chilorio is a traditional dish from the state of Sinaloa in Mexico, comprising slow-simmered pork that is fried and then cooked in a chile sauce, which was used as a means to preserve the meat before refrigeration.
