The rather odd-looking white fungus used here looks nothing like the rest of the mushroom family to which it belongs. Peachy white in colour, it could pass itself off as a natural sea sponge, but it is similar in texture to the more common cloud ear or wood ear mushrooms. Called bai mu er (or white cloud ears in translation), it is a characteristic ingredient of this soup from Beijing.
