This soup, also known as Three Pearls Soup, is a typical offering from Shandong province that is usually served during the cold winter months — Shandong winters can plunge to a shivering -15°C/5°F!

Ingredients

Method

  1. Mince or grind the chicken and mix it with the salt and cornflour. Whisk the egg white until slightly frothy, then add the ground chicken mixture and combine well.
  2. Plunge the tomatoes into boiling water for 30 seconds, then refresh in cold water. Peel away the skins, remove the seeds and chop the flesh into small dice.
