The use of aromatic little sesame seeds is common all over China. They appear in dim sum, sprinkled on stir-fries, ground into a cream or, as here, are used to coat pieces of meat or chicken for deep-frying. They have a delicate, nutty fragrance. Sesame seeds are either pale beige or jet black in colour. They brown quickly so watch your oil temperature when frying these delicious morsels.
