Prawn Cutlets

In the inland areas of northern China, you can see fishermen in small boats throwing large nets into the rivers and dragging them to catch prawns, as well as squid and fish. The catches are often sold immediately on the riverbanks. Prawns this fresh have an extra-special flavour when they are cooked. Most of us are not able to buy prawns direct from the fishing boat, but do try to buy the freshest ones you can.
