When fish is absolutely fresh, the best way to cook it is by steaming it with hints of fresh ginger. A few pickled sour plums will heighten the subtle flavour of delicate fish such as sea bass, mullet or snapper, and a few shreds of salted mustard greens add a salty touch to the ensuing ‘soup’ that is created after steaming. This is a classic dish of Tianjin, a municipality that borders Hebei province and Beijing.
