This is a northern Chinese favourite that has transcended borders, and even the seas — steamed chicken with wine is now a staple in just about every Chinese home, wherever it may be. It is a simple dish; if you have all the ingredients, all you need to do is sit and watch it steam. The results belie the simplicity of preparation. A whole chicken is used here, but you can use joints or breasts, if you prefer.
