Game birds are more popular in China’s rural north (where quail, partridge and other wild birds thrive) than they are in towns. Quails, however, often appear on banquet menus today. They are very small birds and you need two for an adult main course portion or one as an appetizer. The important thing to remember with game is that the meat is quite dry and needs slow cooking to moisten and tenderize it. Braising does this perfectly.
