Mandarin Pancakes

Peking duck would not be the same without these pancakes. I learned how to make them many moons ago from the master of Chinese cuisine, the late, venerable Kenneth Lo, when I was teaching at his culinary institute in London. They are extremely easy to make, requiring no special skill, but a lot of patience. Of course, the easy option is to buy them ready-made, but think how impressed your guests will be when you next entertain and ser
