This dish is reputed to have been invented by the first of the Manchurian emperors of the Qing Dynasty. While they reigned, the arts flourished and the Mandarinate was filled with educated people, gourmets and cultured officials. As this is a Muslim dish, rice vinegar is used instead of wine.

Ingredients

  • 15 ml/1 tbsp vegetable oil
  • 2 garlic cloves, crushed

  1. Heat the oil in a wok, add the garlic and ginger and stir-fry for 2 minutes. Add the lamb and stir-fry for 2 minutes.
