Although not as famous as Sichuan’s dan dan noodles, Shanxi takes pride in the glorious minced beef noodles that appear on local menus. This recipe makes a one-dish meal that contains all the nutritional constituents: starch, protein and vegetables.

Ingredients

  • 200 g/7 oz dried wheat noodles
  • 15 ml/1

Method

  1. Blanch or cook the noodles according to the packet instructions. Drain and set aside.
  2. Heat the oil in a wok and fry the garlic for 2 minutes, then add the beef and fry for 2 minutes. Add the oyster sauce, sesame oil, soy sauce, Chinese cabbage and pepper and fry for 2 minutes.
  3. Mix the cornflour with 90
