This is a delicious, light dish that is ideal with congee and is very easy to prepare. It requires only eggs and tofu: two products that have a great affinity with each other. In Hebei province it is a favourite summer dish that provides a perfect contrast to deep-fried meat and chicken dishes. The seasonings and toppings can be varied to taste, but sesame oil and pepper are typical of northern China. Use soft or silken tofu for the best results.
