The beans used here are normal green beans, about 7.5cm/3in long; however, any other type of fresh bean, such as broad or fava beans, can be cooked in the same way. When blanched, they retain their crunch and green colour. In Hebei, yellow bean sauce is the key seasoning, and is salty enough that no additional salt is required.

Ingredients

  • 4 garlic cloves, crushed
  • 25 g/1 oz fresh root ginger, grated

Method

  1. Put the garlic in a small bowl with the ginger, peppercorns, yellow bean sauce, sugar and sesame oil, then mix together.
  2. Bring a small pan of water to the boil and blanch the beans in it for 2 minutes. Drain.
  3. Heat the oil in a wok, add the sauce and stir-fry for 1 minute. Add the beans, and cook, stirring, over high heat for 2 minutes.
