A quintessential northern vegetarian dish from Henan, this stew is a signature dish for many Taoist and Buddhist festivals, when meat is not allowed. Most Chinese families, however, serve vegetable dishes as part of every meal, as they demand a good balance of all the food groups. This dish is similar to the eastern Chinese dish, Buddha’s Vegetarian Stew, which hails from Fujian.
