Sesame seeds are used to make an outer coating for these rolls, made from glutinous rice with a filling of sweet red bean paste, which is sold in cans in Chinese stores. Sesame seeds come in two types: white or black. This favourite Beijing snack traditionally uses the white type, but you can use either, since, apart from their colour, there is no difference in taste. These look very pretty with a mixture of white and black seeds, as here.
