Although Chinese spinach comes from the same botanical family as regular spinach, and is similar to it, it is more robust and fibrous in texture with purple streaks running all the way from the stem to the leaves. It is believed to be restorative for the blood. Chinese spinach is usually sold with the roots still on, and is becoming more easily available. Salt fish is widely used in Shanghai cooking as a salting and flavouring agent.
