This fragrant soup hails from Hangzhou in Zhejiang Province, which has been known as a popular beauty spot for centuries. There is an old Chinese saying: ‘In Heaven there is Paradise; in China we have Hangzhou.’ This beautiful city also offers many gastronomic delights. Chinese ham is very different from the Western kind and the best is reputed to come from Jinhua, also in the same province. If this is unavailable, use good smoked ham.
