Sesame toast is a favourite on dim sum menus everywhere and makes a good choice of finger food when you are entertaining. This recipe has a hard-boiled quail’s egg sitting beneath the usual filling of minced pork. When coated with sesame seeds and deep-fried, these have an intriguing flavour and texture.

Ingredients

  • 4 quail’s eggs, hard-boiled
  • 4 slices of white bread, crusts removed
  • 2 eggs, lightly

Method

  1. Put the quail’s eggs in a small pan of boiling water and cook for 5 minutes. Drain, then cool in cold water. Shell the eggs and cut each in half.
  2. Cut each slice of bread into two triangles. Brush with beaten egg. Mix the pork with the soy sauce, pepper and cornflour, stirring well.
