Also known as jicama, sweet turnips are similar in texture to the common swede or rutabaga but with the sweetness of a conference pear and a hint of water chestnuts. They have a light tan-coloured skin and are shaped like spinning tops. The flesh is white and crunchy, and is often used in Fujian as a filling ingredient for spring rolls or stir-fried as a vegetable.
