To the Chinese, a fish head is as good as any part of the main body, as it contains a lot of tender meat, especially if the head is large. The best heads to use are salmon or tuna, but they have to weigh in at around 1kg/2¼lb to be worthy of being cooked. The meat yield is about a third of the weight, and is mostly found in the cheeks and near the gills.
