Fujian chefs are good at processing seafood into savoury balls and cakes, often adding them to noodle dishes, many of which are grand enough to serve at banquets. This recipe uses prawns; the mixture needs a bit of work to achieve the desired consistency, but the results are superior to commercial ones, which tend to contain a lot of flour.
