Ginkgo biloba nuts come from the maidenhair tree and are regarded by the Chinese with near reverence for their restorative and medicinal properties; they also add flavour and crunch to stir-fries and soups. Dried ginkgo nuts take a long time to soak and soften, so I often prefer to use the canned or vacuum-packed ones that need no preparation other than draining.
