In Jiangxi Province, chefs are fond of steeping chicken and meat in wine overnight before it is cooked. The result is an intense alcoholic flavour, as most rice wines are 30 per cent proof. Start preparations the day before, if possible.

Ingredients

  • 1 chicken, about 1.2kg/2½ lb
  • 5 ml/1 tsp salt

Method

  1. Trim off all excess fat from the chicken. Rub both the inside and outside with the salt.
  2. Mix the rice wine with the garlic, sesame oil and pepper, and rub all over the chicken. Put the chicken in a sealable plastic bag, press out as much air as you can, then seal. Leave to marinate in the refrigerator for at least 4 hours or overnight. Turn the chicken every on
