Ginseng is a strange-looking root known the world over as an elixir. It is a strong herb and you need only a few shreds to impart its intoxicating flavour (you don’t actually eat the ginseng, as it has a fibrous texture — it just flavours the stock). Cloves are added to the dish to heighten the flavour and temper the bitterness of the ginseng.
