Like many Chinese recipe names, the origin of the name of this dish from Fujian province is a mystery, though there are many theories. According to the late Kenneth Lo, owner of the London restaurant Memories of China, one theory has it that when the chicken is steamed, the glutinous rice coating almost resembles snowflakes. Whatever the meaning of the name, it is a very pretty dish that is also extremely tasty.
