Frog’s legs have been a star item in Shanghai cooking for centuries. When properly cooked, they taste like young chicken but have a milder flavour and chewy texture. Farmed frogs are common in the swamps and wetlands of eastern China. Frozen frog’s legs are available in Chinese stores and are sold skinned and cleaned as attached pairs.

Ingredients

  • about 60 ml/4 tbsp vegetable oil
  • 16 pairs prepared frog’s legs
