In Chinese cuisine, shredded beef requires a piece of sirloin or loin to be first sliced and then shredded with a sharp knife, or even a fine-edged metal spoon or ladle. This method yields exceptionally tender beef, which can then be used for quick stir-frying over high heat.

Ingredients

  • 450 g/1 lb beef sirloin, loin or fillet/tenderloin

Method

  1. Cut the beef into thin slices then cut the slices across with a half-cutting, half-scraping motion to make thin, fragile julienne strips.
  2. Combine the soy sauce, rice wine, oyster sauce, pepper and 15ml/1 tbsp of the oil. Add the beef and gently mix to coat. Cover and leave to marinate in the refrigerator for 15 minutes.
