The appearance of beansprouts in fried rice is a Hangzhou speciality, the vegetable being more usually stir-fried and served just as it is. The crunchiness of the beansprouts uprovide a lively contrast to the rice, along with the ham. Jinhua ham is on the dry side so, to make it more succulent, you can slice it thinly then blanch it for a minute in boiling water before adding.
