Egg-fried rice is very popular in Chinese restaurants outside China, but you will not find it anywhere in China. If rice is to be fried, it will always be enriched with a selection of meat, seafood or vegetables. Given that the dish evolved from the need to recycle leftover cooked rice, you can add anything you want to it. In Shanghai, fried rice is a complete meal in itself, and restaurant versions are studded with choice ingredients such as prawns or shrimp, scallops, lobster or chicken.<
