On certain days during the Lunar New Year celebrations (which actually last for two weeks), Taoist temples are packed with devotees praying to their ancestors and the different deities within the Taoist pantheon. Temple priests stir up huge woks of vegetarian noodles on the third day of the Lunar New Year, as this is deemed a universal vegetarian day. Beancurd wafers are thin brown pieces of dried tofu, about 7.5 x 5cm/3 x 2in.
